TOP OF THE MANTLE

Hello from Barbara's Entourage
Every day is a day for which we should be thankful. God chose to make each day, to let us rise to the daybreak, whether it is raining and cold, sun shining and hot, or in between. But, being human, most of the time, we can certainly find something with which to be unhappy. The rain messes up the plans we have previously made - soccer games, for instance, that have to be played in the rain, unless there's expectation of severe weather. But, believe me, rain will not keep the kids from playing! In fact, sometimes the coaches will call a game, when the kids really want to play!
Then, if the sun is shining and it's very hot, it's too hot to get out and do yard work. Let's not kid ourselves! Some of us can't be happy with any weather - it's too hot to work, or too cold to work - so we'll just spend our time inside!
Whether we work outside, or inside - or we don't work at all, today is a day for which to thank God. He has let us live one more day, breath one more breath, in order to spread the gospel to those that are less fortunate. He trusted us with His Word - that we might share freely with those with which we come in contact daily. So let us rejoice in today, and give God the thanks that HE deserves!

CHICKEN WITH FRESH HERBS AND VEGETABLES
Makes 4 Servings
Serve over rice or linguine for a one-dish meal. If you don't have fresh herbs, substitute 1 tablespoon dried basil and 1 teaspoon dried oregano.
1/4 cup fine, dry bread crumbs
6 tablespoons shredded Parmesan cheese, divided
4 skinned and boned chicken breast halves
2 tablespoons olive oil
10 large mushrooms, quartered
1 large green bell pepper, thinly sliced
3 large tomatoes, coarsely chopped
1 large garlic clove, pressed
1/2 teaspoon salt
1/4 cup chopped fresh basil
1 tablespoon chopped fresh oregano
COMBINE bread crumbs and 4 tablespoons Parmesan cheese, and dredge chicken in mixture.
COOK chicken in hot oil in a large skillet over medium-high heat 4 minutes on each side or until browned. Remove chicken from skillet.
ADD mushrooms and bell pepper to skillet; sauté 3 minutes. Add tomato, garlic, and salt; return chicken to skillet. Cover, reduce heat, and simmer 10 minutes. Stir in basil, oregano, and remaining 2 tablespoons Parmesan cheese. Serve immediately. Prep: 10 min., Cook: 18 min.

The Twenty Third Psalm
(For the Work Place)
The Lord is my real Boss, and I shall not want. He gives me peace, when
chaos is all around me. He gently reminds me to pray before I speak and to do all
things without murmuring and complaining.
He reminds me that He is my Source and not my job. He restores my sanity
every day and guides my decisions that I might honor Him in everything I do.
Even though I face absurd amounts of e-mails, system crashes, unrealistic
deadlines, budget cutbacks, gossiping co-workers, discriminating
supervisors, and an aging body that doesn't cooperate every morning,
I will not stop -- for He is with me!
His presence, His peace and His power will see me through. He raises me up,
even when they fail to promote me. He claims me as His own, even when the
company threatens to let me go.
His faithfulness and love are better than any bonus check, and His
retirement plan beats every 401K there is!
When it's all said and done, I'll be working for Him a whole lot longer and
for that, I bless His Name.
